Creative celebration cakes made without using conventional flour

Not all cakes have to be made using traditional ingredients to produce delicious results as Daisy Smeddle can prove with her range of exquisitely crafted celebration cakes which are suitable for a range of dietary needs.

Since 2016, Daisy, who runs Daisy and Other Flours has turned her childhood love of baking into a cake baking business and is well versed in all kinds of allergen-friendly baking.

“I have always loved baking it was something that I did as child standing on a chair so that I could reach the worktop and my baking just got more and more ambitious from there! I started selling my cakes in 2016 initially just for friends and family but then started I to build up a wider client base. I am based in Grove but deliver my cakes around the area to my customer’s home or chosen venues, and I try to accommodate all of my customer’s requests.”

“I come from a family of dietary requirements, so I am very well versed in all kinds of allergen-friendly baking! I have it on exceptionally good authority that my gluten-free cakes are actually better than cakes that include gluten. When I first started making vegan cakes it took me a few tries to get the best consistency, removing gluten and soya from a vegan cake had me stumped for a while but oat milk seems to be the trick. My kitchen does handle allergens so although every effort is made to ensure there is no cross contamination there is a chance; it hasn't happened yet, but I just want to make sure that anyone ordering is aware that my kitchen does handle allergens.”

“My favourite thing about baking is anything that is a challenge. I love the details of cake decoration; sugar paste is my favourite. I find myself getting lost in decorating, I once sat decorating for 10 hours straight - I didn't eat, drink, or even move! I got so completely absorbed that I just didn't notice the time passing then all of a sudden it had been 10 hours! Another memorable moment was a commission for 5th birthday. I was very firmly tasked by the birthday girl to make a navy blue, yellow, pink and purple unicorn - not a colour combination I would have thought of myself! It was lovely to see how excited she was when I fulfilled her brief, and it was a great challenge to have those colours incorporated.”
